Little Beach House Miami’s chicken club
(Pictured top) Layer smoked turkey, three slices of bacon and two slices of white Cheddar cheese, then add mustard, mayonnaise, two slices of tomato, red onions and pickles to sourdough bread. Grill the sandwich on a plancha or a panini press. Then add lettuce and guacamole and sandwich both sides together. Serve with dill potato chips and aioli.
Toast two slices of rye with clarified butter. Mix mayo, ketchup, lemon juice, chilli sauce, Worcester sauce, Tabasco, finely diced gherkin, creamed horseradish, and a pinch of sweet paprika, and spread on each slice. On one slice, add beef brisket (brined and slow-cooked), sauerkraut and two slices of Swiss cheese. Grill to melt, then sandwich, cut and serve with a pickle.
Soho House Chicago’s grilled cheese
Melt 60g butter with two sage leaves. Slather 20g mascarpone on one side of two slices of sourdough, then top with 40g sliced Gruyère. Put in the oven open so the cheese starts to melt. Close the sandwich, brush sage butter on one side and sprinkle over 20g Parmesan. Put on a griddle with a weight until a crust forms, then flip and repeat. Cut, then garnish with fried sage.
Café Sou’s pecan paté & lentil foie baguette
To make a lentil foie, blend sautéed mushrooms and onions, cooked lentils, walnuts, yuzu juice, truffle oil, togashi spice and herbs. Split a fresh baguette in half. Cut lentil foie into 1cm slices and sear both sides until caramelised. Spread butter on one side of the baguette and pecan paté on the other, then layer in pepperonata relish, lentil foie, sliced cornichons and rocket.
